Feast for the Eyes
Today is just a quick post to give you an idea of a simple yet delicious holiday appetizer, whether for your Thanksgiving table or the upcoming Christmas holidays.
Roasted Carrots and Oranges with Pesto Yogurt Dip, Pomegranate and Herbs
Isn’t it just a feast for the eyes?! It’s delicious and healthy too. You can use store bought pesto or make your own beforehand (it freezes well too). Use rainbow carrots as they just look pretty.
Cut carrots lengthwise and slice oranges, coat everything with a bit of pesto and roast at 400 degrees for about 20 minutes turning often.
Mix a small container of plain Greek yogurt with 1 Tbsp of pesto, plus extra sea salt and spices and spread it on a plate. Arrange carrots and orange slices on top, sprinkle pomegranate seeds, chopped scallions and herbs.
