We may look innocent, but do not ever trust us! We are the most scary creatures on Earth!

What’s Cooking This Week
Some say that witches bathe in milk to keep their bodies young and beautiful. And that’s exactly what I did right before I jumped on a broom. And just to be on a safe side, I bathed the chicken in milk too. You know, the sacrificial one… Here is the recipe. It’s witch-approved and full of creamy sweetness and spice.
Chicken and Apples in Lemon-Ginger Coconut Sauce
2 lbs of chicken tenders
4 medium carrots, diced
3 medium apples, cored and sliced
1 can of coconut milk
1 lemon, zest of plus juice
2 spoons of ground ginger
1 tspoon of basil
1 tspoon of paprika
1 tspoon of garlic powder
1/2 tspoon of turmeric
1/4 tspoon of nutmeg
Salt, pepper, fresh herbs
In a small pot, combine coconut milk, lemon zest and juice and all the spices except basil. Cook on a low heat for about 1-2 minutes, then let it cool till it’s warm. Salt and pepper chicken tenders, then arrange them in a baking dish and cover evenly with coconut sauce. Let it soak for at least 20 minutes.
In a mean while, pre-heat the oven to 375F degrees, cut carrots and apples.
Arrange carrots and apple slices on top of chicken and sprinkle basil over.
Bake for about 30-35 minutes. Garnish with any fresh herbs, I used parsley.
The sauce has a nice combo of sweetness and spice. And tender chicken is paired nicely with tart apples. The dish can be served over any side, such as rice or pasta. I prefer it just like that with some dark bread that you can dip in the sauce.
